Pudhina Aloo :)

Me again. Found this on a cooking website and wanted to share it ...

You need these to start with...
Baby potatoes- 20
Coriander leaves - fistful
Mint leaves - fistful
Green chillies - 1 or 2
Cumin seeds - 1/2 tsp.
Black pepper powder - 1/4 tsp.
Kasuri methi - 1 tsp.
Salt - as per taste
Oil - 2 tablespoons

this is how you cook it!

Grind the coriander leaves, mint leaves, green chillies and salt to a fine paste.
Boil, peel and prick the potatoes with a fork. Marinate with the above paste for 1/2 an hour.

Heat oil, add cumin seeds. When it sizzles, add in the marinated potatoes and black pepper powder. Sauté well till you see golden spots on the surface of the potatoes. Crush the kasuri methi with your palms and sprinkle over the potatoes and give a quick sauté. Serve hot.

idli upma

i came across this from a website.. a nice way to treat the left over idlis to good use...

1. Leftover Idli's
2. Curry leaves
3. Coriander leaves (optional)
4. Sesame seeds(optional)
5. Mustard seeds
6. Oil, salt

Method:

and cut them into strips (or in a shape you like to). I cut them thicker that the usual potato fries.
  • Take Idli's
  • Take a thick flat pan (preferable non-stick), and add oil on medium to high heat.
  • Add the cut Idli's and toss it around in the pan. Do not handle them a lot as it tends to break.
  • Add little more oil onto a side and ddd mustard seeds, chopped curry leaves, sesame seeds and toss around again.
  • Adding salt is optional as it depends on the Idli's.
  • Make sure that the idli fries, brown evenly on all the sides.
  • Garnish with chopped coriander (optional). Serve Hot.

Spiced Potato Curry Recipe

Here I am again writing something I have tried… I found this from a website and tried and it came out pretty well :)
Ingredients:

  1. 2-3 medium potatoes
  2. 1 tsp cumin seeds
  3. 1 tsp grated ginger
  4. 2-3 crushed garlic pods (skin removed)
  5. 1 tsp coriander seeds (crushed)
  6. 1 tsp fennel seeds (crushed)
  7. ½ tsp pepper powder
  8. 2-3 slit green chillies
  9. Pinch of turmeric
  10. Handful Coriander leaves chopped
  11. Salt
  12. oil

Method:

  • Peel the potato roughly and cut into cubes/bite size pieces.
  • Boil water in a sauce pan and then add the chopped potatoes and salt. Let it cook, but make sure there is still some bite to it.
  • After it is cooked, drain the water completely and keep aside.
  • Now heat a flat pan/kadhai and add some oil. Add the cumin seeds, garlic and ginger. Stir until garlic ginger is cooked and slightly browned.
  • Now add the crushed fennel seeds, coriander seeds, pepper powder and give it a stir.
  • Add the cooked potatoes, green chillies, salt and stir well in intervals.
  • Let this cook for about 6-7 minutes until the sides have browned, spices are coated well.
  • Finally garnish with coriander leaves.
